1 1/2 Cups AP Flour
2 T sugar
1 T baking powder (non-Aluminum – Rumford)
~ 1 Cup milk
1 T canola oil
Add dry ingredients and stir, add wet until combined. Note add milk carefully until desired consistantcy. Thicker batter for thick pancakes and thin batter for thin ones. My kids like it in the middle.
Note that I add the oil to the batter not the pan. Heat nonstick pan medium heat or until water dropped on pan sizzles. I use 1/4 portions for perfect size pancakes for my little ones. Turn when tiny holes that show up become solid around the edges. Sprinkle with powered sugar or drizzle with maple syrup. Enjoy.
